Who every heard of a drunk cake?

This is a REALLY good and easy cake to make! Once someone tastes this, you will be asked to make it again and again and again…

Cake

  • 1 pkg vanilla instant pudding mix (3-3/4 oz)
  • 1/2 cup pecans chopped (+ 1/2 cup?)
  • 1 pkg butter recipe golden cake mix
  • 1/2 cup light rum (or dark/flavored)
  • 1/2 cup water (or rum)
  • 1/2 cup cooking oil

Hot Glaze

  • 1 cup sugar
  • 8 tbsp butter
  • 1/4 cup light rum (or bourbon/whiskey)
  • 1/4 cup water (or rum/bourbon/whiskey)

Cake

  1. Grease and flour a bundt pan or a 10x4 tube pan. Crumble nuts into bottom of pan.
  2. Place cake and pudding mixes in a large mixing bowl. Add rum, water, oil and eggs. Mix for 2 minutes.
  3. Pour batter into cake pan and back at 325 degrees for 50 to 60 minutes.
  4. Remove cake from oven and immediately pour on the Hot Glaze. The hot glaze will cause the cake to settle, but don’t be
  5. alarmed for the cake will taste yummy.
  6. Cool cake in the pan for 30 minutes and remove to a serving plate.

Hot Glaze

  1. Place ingredients in a small saucepan and boil for 2 to 3 minutes.

I’ve made it many times and probably a little different each time.

  1. I’ve found that I prefer a dark rum instead of light rum and flavored rums can really make the cake delicious.
  2. Due to a mistake when I made the cake the first time, I now put bourbon in the glaze instead of rum and I have also found that flavored bourbon (or whiskey) can be quite flavorable.
  3. I also replace any called for water with the appropriate liquor.
  4. I was very surprised to find out what a difference the cake and pudding mixes from Whole Foods made. The ones that I found very good are Sweet Neecy Original Cake Mix and European Gourmet Vanilla pudding.
  5. I also add about another 1/2 cup nuts in the batter.
